Chipotle-Chocolate Brownies

Makes: 32 brownies
8 ounces semisweet chocolate, chopped
1 cup butter
2 cups all-purpose flour
¼ cup unsweetened Dutch-process cocoa powder
2 ½ cups sugar
1 tablespoon instant espresso coffee powder or instant
coffee crystals
1 ½ teaspoons ground cinnamon
1 to 2 teaspoons ground chipotle chile pepper
2 teaspoons vanilla
6 eggs
Unsweetened Dutch-process cocoa powder
1 Preheat oven to 325°F. Line a 13x9x2-inch baking pan with foil, extending the foil over the edges of the pan. Grease foil; set pan
aside. In a small saucepan combine semisweet chocolate and butter; cook and stir over low heat until melted and mixture is smooth. Cool
slightly. In a small bowl combine flour and ¼ cup cocoa powder; set aside.
2 In a large bowl combine sugar, coffee powder, cinnamon, and ground chipotle pepper. Add cooled chocolate mixture and vanilla. Beat with an electric mixer on medium speed for 1 minute, scraping sides of bowl occasionally. Add eggs, one at a time, beating on low speed just until combined. Add flour mixture, 1/2 cup at a time, beating after each addition just until combined. Beat on medium
speed for 1 minute more. Spread batter evenly into prepared baking pan.
3 Bake for 35 to 40 minutes or until edges start to pull away from sides of pan. Cool in pan on a wire rack. Using the foil, lift uncut
brownies from pan. Cut into bars. Sift additional cocoa powder over tops of brownies.
