Roasted Mixed-Berry Compote
Serve this berry compote as a hot topping for pancakes or French toast, or cooled as a topping for Greek yogurt and granola. Substitute fresh berries if they are in season.
Ingredients | Serves 4
1 cup frozen strawberries
1 cup frozen raspberries
1 cup frozen blueberries
½ cup orange juice
1 tablespoon grated orange zest from 1 orange
1 tablespoon honey
1. Spray an 8" x 8" casserole dish with nonstick spray and preheat the oven to 350°F.
2. Combine strawberries, raspberries, blueberries, orange juice, orange zest, and honey together in the casserole dish. Cover tightly with foil and bake on center rack until berries begin to break down, about 30 minutes.
3. Remove foil and bake an additional 10–15 minutes until the berry mixture thickens.
